English: Biuret reaction:
The presence of proteins in mushrooms can be proven by a Biuret reaction. A button mushroom or champignon (Agaricus bisporus) is used as an object in the current experiment. A large fruiting body is cut in half. The first reagent, sodium hydroxide with a concentration of 1 mol/dm3 is applied using a clean pipette. A thin layer should cover the entire surface of the cut side of the mushroom. The second solution is applied with another pipette, copper (II) sulfate with concentration of 1 mol/dm3, again over the entire surface. Due to the presence of proteins, the color changes, from light-blue to dark-blue and purple. This change in color is due to the formation of a copper-protein complex. Присуството на протеини во печурките може да се докаже со биуретска реакција, за што во овој експеримент се употребува шампињонот Agaricus bisporus. Се зема едно големо плодно тело и се сече на половина. Со чиста пипета се зема од првиот реагенс, натриум хидроксид со концентрација 1mol/dm3 и внимателно се нанесува тенок слој на целата површина на пресечениот дел од печурката. Потоа со друга пипета се нанесува од вториот раствор, бакар (II) сулфат со концентрација 1mol/dm3, по целата површина. Поради присуството на протеини бојата се менува, од светло сина во темно сина и виолетова. Оваа промена на бојата се должи на формирањето на бакар-протеински комплекс.
